when i was on tour with hairspray & joseph..., i spent over a month and a half in seattle...where i put on approx 5 lbs of cheese weight thanks to beecher's.
i quickly became obsessed (OBSESSED)
with their salty cheese curds (made IN FRONT OF YOU daily), mac 'n cheese, tomato soup w/curds in the breadsticks, flagship cheddar... etc....
you get it.
it's insanely amazing.
i shrieked with joy when they announced a nyc location.
today, meg and i went for grilled cheese sandwiches and i am (again) hooked.
this location also has a sexy little restaurant that i'm so excited to try!
in the meantime, i have squeaky curds in my fridge and i'm a very happy girl, indeed.

I love Beecher's! Every time I go to Pike Place I stop by there. My in-laws have a tradition of sending us one of their cheese baskets for Christmas every year (via Costco). There is always much rejoicing the day it arrives in the mail.
I'm from Seattle and just moved back from Utah. I didn't know about Beecher's until Oprah mentioned it. I finally had a sample of it when we went to Pike Place Market several months ago. They sell this cheese near my home at the Fred Meyer's store and frequently give out samples. I am in heaven! :)
I used to live 4 blocks from pike place... my behind is greatful that I moved to a different area of town :) Congrats on the new location! Yay for NY!
mmm, can't get enough of their macaroni and cheese.
We tried that on our recent trip to Seattle; I fell in love! Mmmmm...getting hungry just thinking about it!

I went to visit a friend in Seattle a few months ago and about died of delight over the grilled cheese sandwich. I'm going back in August and a visit to Beechers is definitely on the itinerary.
my mom just booked us a trip to Seattle in mid July, I will 100% try this place because anything cheese = heaven in my book! any other restaurants you are a fan of in Seattle? we're staying at the FS downtown
you HAVE to try the grilling cheese. I am not sure what it is called but you grill it or warm it in a pan and it is SO good. Trust me, you will love it! Especially if you like the salty curds! Just ask them for the grilling cheese.

I also love Beecher's. I am a local and If you purchase the Pure Flavor cookbook you can make mac and cheese at home, it is kind of dangerous but really delicious. There tomato soup is also out of this world too.

I'm a local so we stop by there every so often to indulge! But recently I came across the mac&cheese recipe and got adventurous in my kitchen. It was super easy and SO delish! The only drawback was spending over $35 in cheese. Totally worth it though...
